Solina based on availability
It is an ancient variety of soft wheat, included in the PAT (typical Abruzzo food product). In some popular sayings its organoleptic characteristics and its ancestrality are enhanced: it is called the "mother of all grains". Like Saragolla, however, its cultivation was abandoned due to low productivity, to the detriment of health: these varieties have undergone less genetic alterations, therefore containing less gluten and ensuring a more balanced ratio between starch and gluten.
Saragolla based on availability
It is a close relative of the more famous and widespread Khorasan red wheat produced by Kamut: it is an all-Italian cereal and has the same qualities and properties. From its grinding, a very pleasant flour is obtained both in the profanation and in the flavor.
Emmer based on availability
It is the oldest variety of wheat grown by man. It is particularly suitable for those who do not digest hard or soft wheat pasta and bread, being a low gluten flour but NOT suitable for celiacs. It provides only 335kcal / 100g, and is particularly rich in proteins and vitamins of group B. Its high fiber content helps to regulate the intestinal tract and guarantees a state of satiety, which is why it is widely used in slimming diets.

It is a real mine of precious substances: in addition to fiber, the whole grain is rich in carbohydrates, proteins, vitamins, mineral salts and antioxidant compounds that promote good metabolism and protect the heart, reduce the risk of diabetes and overweight, and defend the body from some types of cancer by counteracting oxidative stress.
Kamut based on availability
Durum wheat of oriental origin, also known as Red Wheat, Kamut has a high energy and caloric power. It is therefore recommended for athletes, the elderly and growing children. It is rich in Selenium, Magnesium, Zinc, Vitamin E, lipids and fatty acids. However, it has a low gluten content, so it is easily digestible even by people who suffer from slight intolerances.

It is obtained from the combustion of poplar and birch wood at a temperature of 550/600 ° C, in an oxygen-poor atmosphere. The result is an extremely porous, odorless and tasteless powder.
